Products are defrosted gently using an air stream, with maximum speed and reliability thanks to smart process control. The system is hygienic, and specifically designed to minimise waste due to dripping.
If desired, REICH defrosting systems can switch to a defined “cold storage” mode after the defrosting process, to keep thawed products as cool for as long as necessary.

REICH has taken advantage of the laws of physics when developing its innovative, intelligent process control for product defrosting:
A very high level of humidity is set in the defrosting chamber at the start of the thawing process. The frozen surface of the product cools the moist air to below the dew point, so that the moisture on the surface of the product condenses and crystallises immediately there, due to the low surface temperature. As the liquid water changes phases to become solid ice, heat (heat of crystallisation) is released, causing the product to warm. After a thin layer of ice has formed on the surface of the product, the defrosting chamber is heated, causing the ice crystals to thaw once again.
This process is repeated until a specified surface temperature is reached. Then the system switches to pause mode and the fan, heating and humidification are switched off. The pause continues until the specified difference between the surface and core temperature has been reached. This cycle is repeated until the product reaches the desired core temperature.
The surface temperature remains low during the entire process, ensuring good hygiene and safety in terms of bacteriological growth, so as not to negatively impact product quality.
When the system is in smart automatic mode, the operator only needs to enter a few values, including the starting value for the room temperature and a maximum product surface temperature, as well as the specified final core temperature. Then, the operator simply places the two Pt-100 temperature sensors in the product to record the surface and core temperature, and starts the process.
When working with thin products that do not allow the placement of a surface temperature sensor, the process is managed via the core temperature sensor and a process time set for the specific product.
A convenient touch screen controller with a brilliant TFT display and projected capacitive touch technology is used to control the REICH AIRMASTER® ATA ClimaStar defrosting system, and provides a variety of interfaces and an industry standard housing.
The different interfaces allow data transfer between the touch panel and a PC. The REICH MasterControl visualisation program can be used to link the controllers to a higher-level program monitoring and logging function for temperature and moisture curves, processes, etc. This ensures comprehensive quality controlling for processed products in accordance with HACCP and IFS (ISO 9000).
The REICH RemoteControl remote maintenance/activation system allows operators to manage the MasterControl program and more from anywhere (internet).
